How are you doing? In this post, I’m going to be sharing with you my favorite pink pasta recipe. It is an easy recipe to prepare with just a handful of ingredients. The sauce is so creamy and smooth that you will love it! You can make this recipe with any share pasta you’d like :).

Ingredients:
- 2 medium beets, roasted, steamed or boiled, peeled and chopped
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ½ cup heavy cream (or coconut cream for dairy-free)
- ¼ cup grated parmesan cheese (plus more for serving)
- ½ cup vegetable or chicken broth
- 1 tbsp butter
- Salt and freshly ground black pepper, to taste
- 12 oz pasta of choice
- Fresh basil or parsley, for garnish
Instructions:
- Cook the Pasta – Cook the Pasta – Boil pasta in salted water until al dente. Reserve ½ cup pasta water before draining.
- Sauté the Garlic – In a skillet, heat olive oil and butter. Add garlic and sauté until fragrant but not browned.
- Blend the Sauce – In a blender or food processor, combine roasted beets, sautéed garlic, cream, broth, and parmesan. Blend until smooth and creamy.
- Heat & Season – Pour sauce back into the skillet. Simmer gently, adding salt, pepper, and reserved pasta water if needed for consistency.
- Toss & Serve – Add cooked pasta to the skillet, toss the pasta until it is well coated, and serve the dish topped with extra parmesan and fresh herbs.
As finishing touches, you may squeeze some lemon and put lots of cheese on the pasta!
